The project’s main objective is the characterization, evaluation and utilization of Greek olive varieties with the aim of increasing tolerance to climate change, producing distinctive high-quality flavorful, aromatic, nutritious olive oil products, and in the long term producing or using new olive varieties. This goal will be achieved by targeted grafting in rootstocks with high tolerance to abiotic stresses and at the same time by selective crosses to improve qualitative and agronomic characteristics. In addition, the project focuses on the enhancement of the specific nutritional characteristics of selected olive varieties via organoleptic analyses, innovation, promotion and training.
